What is the official format for guitar music?
Everyone keeps telling me that real guitarists don’t use tabs, they use regular 5 line staff music. They don’t play guitar so I don’t know.

it depends. There is no "official format" for all guitarists. Classical guitarists almost always read music on a 5 line staff. Rock music is almost always written in tab form. Some purists may look down on tab music, because it doesn’t require the player to know the name of the note being played. The "real" guitarists I know mainly play by ear, no written music at all,
Everyone is right. Guitarists use 5 line staff music just like other musicians.
